I created this blog to post my favorite recipes I have found on the Internet or other people have given me in the past or I have created myself. Most of the recipes I have printed end up getting stuffed in a drawer in the kitchen and then I start sorting through a stack of papers for a particular recipe. Therefore, I have decided to create a blog to have easier access to my favorite recipes and to share with others.

Banana Bread

INGREDIENTS:
     2 cups all-purpose flour
     1 teaspoon baking soda
     1/4 teaspoon salt
     1/2 cup butter
     3/4 cup brown sugar
     2 eggs
     2 1/3 cups mashed overripe bananas

DIRECTIONS:
     1. Preheat Oven to 350 degrees F.
     2. Lightly grease 9x5 loaf pan.
     3. In mixing bowl, mash bananas.
     4. Add eggs.
     5. Cream butter and brown sugar, then add to mixing bowl.
     6. Add salt
     7. Add baking soda.
     8. Add flour gradually while mixing.
     9. Pour mixture into baking pan.
   10. Bake for 60-65 minutes or until a toothpick inserted into center of loaf comes out clean.
   11. Lest cool for 10 minutes.

VARIATIONS:
#1: substitute vegetable oil instead of butter
#2: bake in mini-loaf pans (makes 4, cooking time 30-35 minutes)
